Training

 

Overview

Each candidate for the program will be evaluated in the following areas:

  1. Reading, mathematics, and communications
  2. Orientation and Mobility
  3. Daily Living Skills

 

Training will include:

  1. Sanitation
  2. Bookkeeping
  3. Applicable laws, regulations and policies
  4. Equipment operation and repair
  5. Product management
  6. Marketing skills and techniques
  7. BEP report requirements

 

Cafeteria Facility Training

Entry into the Business Enterprise Program as a cafeteria location operator requires passing the five week BEP training program at MCBTC, 80 hours of on-the-job training in a vending machine location and 80 hours in a dry, semi-dry or snack bar location, a minimum of ten academic competencies, and ten weeks of on-the-job training by BEP-approved cafeteria trainers.

The ten competencies may be obtained at an institution of higher education offering programs in food service or motel and hotel management. Questions concerning these academic competencies should be directed to the responsible Promotional Agent.  The 10 competencies are approximately equivalent to one complete academic year of study. These competencies can be obtained by successfully completing the following food service courses:

  1. Principles of Food Production
  2. Food Service Sanitation
  3. Food and Beverage Cost Control
  4. Food and Beverage Purchasing
  5. Basic Restaurant Accounting
  6. Hospitality Law
  7. Human Relations and Supervisory Development
  8. Business Mathematics
  9. Communications
  10. Building and Equipment Maintenance
