Cucumber Slaw

1 tsp Mirin (Japanese sweet sake)
1 Tbl rice wine vinegar
1 tsp Michigan sugar
1/2 cup Zeeland Farm Services 100% soybean oil
1 seedless Michigan cucumber
4-5 stalks Michigan green oin
 
Mix Mirin, rice wine vinegar, sugar and oil. Cut green part of the green onions julienne style and add to the mixture. Chill. Just before serving, peel and seed the cucumber. Cut julienne style. Toss the cucumber with green onion mixture and serve.
