Black Bean Relish

Servings: 12
Serving size: 1 cup
  • 3 cups dry black beans, soaked and drained
  • 1 cup cooked white rice
  • 1 cup cooked corn, frozen or canned (drained and rinsed)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tablespoons red onion, diced
  • 3 tablespoons cilantro, chopped
  • 1 tomato, chopped
  • 1 tablespoon olive oil
  • 3 tablespoons red wine vinegar
  • Pepper to taste
    1. Place beans in pot and add water to cover the beans.
    2. Bring to a boil.
    3. Reduce heat and simmer for about one hour, or until tender.
    4. Drain and rinse well under cold water.
    5. Mix black beans with remaining ingredients.
    6. Season to taste with pepper.
    7. Serve chilled.Mix beans with onion and tomatoes
