Sweet Potato Pie

Servings: 8
Serving size: 1/8 of pie
  • 3 cups cooked sweet potatoes, peeled and mashed
  • 3/4 cup sugar
  • 1/2 cup egg substitute
  • 2 teaspoon vanilla
  • 1 teaspoon lemon-flavored extract
  • 1 tablespoon butter-flavored extract
  • 1 teaspoon cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. lemon juice
  • 1-1/2 cups evaporated fat free (skim) milk
  • 1 9" frozen pie shell, defrosted
    1. Preheat the oven to 350 degrees.
    2. Mix all the ingredients together and beat until smooth.
    3. Pour into the pie shell.
    4. Bake for 40 minutes.
