Mitchell State Park - Whitetail Processing and Cooking Clinic
The first day of this whitetail deer processing and cooking class will cover field processing, skinning, deboning and prepping venison for grinding and cooking and preparing wild, foraged edibles to be cooked.
The second day, instructors will demonstrate smoking techniques, preserving foraged foods, how to make venison smoked summer sausage, hot digs, breakfast sausage, holiday smoked fish dip and more.
Cost for this class is $70. Registration is required.
In addition, onX maps now offers a discount for each Outdoor Skills Academy student, and if you decide to keep the app after your free trial, onX will donate a portion of the proceeds to conservation education. A promotional code will be sent via email prior to the class.
To register for this class, go to Michigan.gov/DNRLicenses and click on the "Purchase a license" button. Sign in (using either a username and password or your ID and birthdate), and find the class under the Outdoor Skills Academy tab.

Cancellations must be made two weeks prior to guarantee a refund. Please note cancellation policy:
- Cancellations made any time after processing this reservation until the close of business two weeks prior to your scheduled arrival date will incur a 50% cancellation fee. If you cancel after the two-week deadline, no refund will be issued. Students are entitled to any of the materials purchased for the class after the two-week deadline, except materials that have a shelf life.
- To receive a refund, you must email ShawE@Michigan.gov with the following in the subject line: "Refund [class name]." A phone call or voice message will not be considered notification. You must email ShawE@Michigan.gov.
A Recreation Passport is required for entry into Mitchell State Park.
