Most juice and cider processors are subject to the FDA’s Juice Hazard Analysis Critical Control Point (HACCP) regulation. Each juice processor is required to conduct a Hazard Analysis of the operation and construct a HACCP Plan if hazards are identified. The person who conducts the analysis or writes the HACCP Plan must be properly trained on HACCP principles.
